For my very first post, I wanted to share something light, fresh, and perfect for summer. There is something so comforting about a simple meal that doesn’t require much fuss, especially on warm days when you want something easy yet pretty and satisfying.

This Summer Chicken Salad Croissant recipe is refreshing, simple, and perfect for lunch, a light dinner, a church gathering, or even a sweet cottage-style picnic. Serve it with fresh fruit, cucumber slices, and a glass of iced tea for an easy summer meal that feels both practical and special.

Summer Chicken Salad with Apples, Grapes, and Pineapple

This refreshing chicken salad is light, sweet, and perfect for a summer lunch, picnic, church gathering, or easy family meal. The apples add crunch, the purple grapes add sweetness, and the pineapple adds a bright, tropical flavor.

Ingredients

  • 3 cups cooked chicken, shredded or chopped
  • 1 cup purple grapes, halved
  • 1 apple, chopped
  • 1 cup pineapple tidbits, drained
  • 1/2 cup celery, finely chopped
  • 3/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup chopped pecans or walnuts, optional
  • Croissants, lettuce leaves, crackers, or sandwich bread for serving

Directions

  1. In a large bowl, add the cooked chicken, grapes, apple, pineapple, celery, and nuts if using.
  2. In a separate small bowl, stir together the mayonnaise, pineapple juice, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture.
  4. Stir gently until everything is evenly coated.
  5. Cover and chill for at least 30 minutes before serving.
  6. Serve on croissants, over lettuce, with crackers, or as a sandwich.
